Looking for a cookie recipe that doesn’t require flour? Then you should try our peanut biscuits with cranberries. Instead of wheat flour, we use healthy oat flakes, which give you an extra portion of nutrients such as magnesium, potassium and fiber.

  • For the base dough:
  • 300 g ground oat flakes
  • salt
  • 175g cold butter
  • 1 Ei (M)
  • 100 grams of sugar
  • For the variant:
  • 50g peanut butter
  • 50g dried cranberries
  • 1 egg white (M)
  • 150 g walnut kernels

preparation

  1. For the shortcrust pastry, sift the oatmeal into a bowl. Mix in 1 pinch of salt. Dice the butter, add with the egg, peanut butter and sugar and mix to form crumbs. Knead with your hands to a smooth dough and add the cranberries. Shape into two square sticks. Wrap in foil and chill for approx. 45 minutes.
  2. Preheat the oven to 170 degrees circulating air. Line two baking sheets with parchment paper. Whisk the egg white. Chop the walnut kernels. Dip the sticks first in the egg white, then in the walnuts. Cut into 6-8 mm thick slices and place on the trays. Bake in the oven for 10-15 minutes. Leave to cool on wire racks.

Recipe Tips

Instead of the cranberries, you can also use other dried fruits such as raisins. As for the choice of nuts, you can also use other types such as hazelnuts or almonds.
