- 1 carrot
- 150 g celeriac
- 1 stick of celery
- 1 small leek
- 1 yellow pepper
- 20 g Butter
- 150 ml fish or vegetable stock
- salt
- pepper from the grinder
- 1 pinch of sugar
- 500 g small potatoes
preparation
- Clean and wash vegetables, peel if necessary, cut into thin strips. Put the vegetable strips in a saucepan with the butter, stock, salt, pepper and sugar and steam for about 3 minutes. Pass the vegetables through a sieve, collecting the stock.
- Cook the potatoes for about 15 minutes. Preheat the oven to 180 degrees (160 degrees for a fan oven).
- Rinse the fish, pat dry, sprinkle with lemon juice, season. Spread the vegetables and fish on 4 sheets of parchment paper. Drizzle with stock, season. Tie into parcels with kitchen twine. Cook in the oven for about 15 minutes. Peel potatoes and drizzle with oil.
