  • 1 carrot
  • 150 g celeriac
  • 1 stick of celery
  • 1 small leek
  • 1 yellow pepper
  • 20 g Butter
  • 150 ml fish or vegetable stock
  • salt
  • pepper from the grinder
  • 1 pinch of sugar
  • 500 g small potatoes

preparation

  1. Clean and wash vegetables, peel if necessary, cut into thin strips. Put the vegetable strips in a saucepan with the butter, stock, salt, pepper and sugar and steam for about 3 minutes. Pass the vegetables through a sieve, collecting the stock.
  2. Cook the potatoes for about 15 minutes. Preheat the oven to 180 degrees (160 degrees for a fan oven).
  3. Rinse the fish, pat dry, sprinkle with lemon juice, season. Spread the vegetables and fish on 4 sheets of parchment paper. Drizzle with stock, season. Tie into parcels with kitchen twine. Cook in the oven for about 15 minutes. Peel potatoes and drizzle with oil.
