Coconut Cakepops Recipes

So they don’t stand around decoratively for long – then someone eats them away. Cake balls on lollipop sticks are also quickly ready and ideal as finger food or for children’s parties.
FOR 25-30 PIECES
  • 2 Eggs
  • 85 grams of sugar
  • 1 teaspoon Baking powder
  • 2 tsp vanilla sugar
  • 125 grams of wheat flour
  • 110 g Coconut flock
  • 200g vanilla joghurt
  • 150 grams of cream cheese
  • 150g white chocolate
  • 25-30 lollipop sticks (e.g. via www.amazon.de)

Where is the coconut… who stole the coconut? We all know the song. Better buy one: Coconut flakes contain a lot of magnesium and B vitamins. Coconut cake pops not only make you happy, they also strengthen your nerves!

1. Preheat the oven to 200 degrees (180 degrees for a fan oven). Beat eggs and sugar until fluffy. Mix the baking powder, vanilla sugar, flour and 35 g coconut flakes. Stir in the yoghurt. Pour the batter into a 20 x 30 cm tin lined with baking paper and bake for approx. 30 minutes. Let the cake cool down.

2. Crumble the cake into a bowl, mix with the cream cheese to form a smooth batter. Form small balls out of it.
3. Melt chocolate. Dip the upper part of the lollipop stick, attach the ball. Process all balls in this way. Chill for 15 minutes. Brush the balls all over with chocolate and sprinkle with the remaining coconut. Leave to set in the fridge.

Tip: Of course, the cake pops also work well with dark chocolate. The grated coconut create an exciting contrast here.
