Cheesecake with passion fruit and nut base Recipe

Cheesecake is not just cheesecake. Another variant of the cheesecake is this one: cheesecake with a nut base and passion fruit. The fruit gives a sour-fruity contrast. Scrumptious!

Ingredients for 8 pieces

​For the floor:

  • 110 g biscuits with oat flakes (oat biscuits, e.g. from Coppenrath)
  • 50 g ungesalzene Macadamianusskerne
  • 50 g Butter

For the cream:

  • 1 heaped tablespoon cornstarch (15 g)
  • 2 tbsp water
  • 350 g „Philadelphia Joghurt Balance“
  • 400 g Sahnequark
  • 4 Eggs
  • 150 g finest sugar
  • grated zest and juice of 1 organic lemon (4-5 tbsp)

In addition:

  • 4 passion fruit
  • 100 ml Passion Fruit
  • 2 sheets of white gelatin

preparation

  1. Finely grind biscuits with a food processor. Roughly chop macadamia nuts. melt butter. Mix in the biscuit crumbs, nuts and butter. Cover the base of a mini springform pan (20 cm Ø, Kaiser) with baking paper and close the edge. Pour in the biscuit mixture and press down with a tablespoon to form a base. Refrigerate.
  2. Preheat the oven to 150 degrees (convection: 130 degrees). Mix the cornstarch and water until smooth. Beat together the cream cheese, quark, eggs, sugar, lemon zest and juice using a hand mixer. Add the mixed cornstarch. Pour the batter onto the biscuit base. Bake on the rack on the lowest shelf for about 2 hours. Remove, let cool in the mold.
  3. Place the cheesecake in the springform pan in the fridge overnight. Cut the passion fruit in half horizontally and scrape out the flesh including the seeds (makes approx. 100 g). Place in a small saucepan and pour in the passion fruit juice.
  4. Soak gelatin according to package directions. Heat the passion fruit mixture in the saucepan, remove from the hob. Dissolve the dripping wet gelatin sheets in it one by one. Let cool down.
  5. Take the cheesecake out of the fridge, pour on the passion fruit sauce and chill for approx. 1 hour.

Level of difficulty: medium, preparation time: approx. 1 hour, baking time: approx. 2 hours, cooling time: overnight plus approx. 1 hour.
