Fine carrot and coconut cake with marzipan bunnies
A juicy carrot cake is an absolute must for every Easter brunch! In our recipe, the grated coconut and cinnamon give the cake an exotic touch. To give the cake a nice Easter look, you can decorate it with sweet marzipan bunnies and sugar eggs. A loaf pan (25 cm) is required. Have fun baking!

- For the dough
- 300 grams of carrots
- 150g softened butter
- 80 grams of sugar
- 1 packet of vanilla sugar
- salt
- 3 Eggs (M)
- 100 g Coconut grater
- 175 grams of flour
- 1 tsp cinnamon
- 1⁄2 packet of baking powder
- For the decoration:
- 150 g pink marzipan
- 200 grams of powdered sugar
- 3 tbsp lemon juice
- 1-2 EL Kokosraspel
- colorful candy eggs (optional)
- some butter and flour for the mold
- Bunny-shaped cookie cutter (approx. 3 cm)
preparation
- Preheat the oven to 180 oC, grease the mold and dust with flour. Peel and coarsely grate the carrots.
- Using a hand mixer, cream together the butter, sugar, vanilla sugar and a pinch of salt for 3-4 minutes, gradually adding the eggs. Stir in the grated carrots and coconut. Mix the flour, zimit and baking powder, sift in, fold in and fill the dough into the mold. Smooth the surface and bake the cake for approx. 50 minutes. After the stick test, remove and let cool in the mold for 10 minutes. Then turn out of the mold and let cool completely on a wire rack.
- Roll out the marzipan between two layers of cling film to a thickness of approx. 3 mm. Peel off the foil and cut out bunnies with a cookie cutter.
- Mix the powdered sugar with the lemon juice and cover the cake with the icing. Spread the marzipan bunnies and a few sugar eggs on top and sprinkle a few grated coconut in the gaps. Let the cast dry for about 1 hour at room temperature.
Recipe Tips
Pink marzipan is available in well-stocked supermarkets with the baking ingredients. You can also color marzipan yourself with a few drops of red food coloring.
