Ingredients for Bircher muesli with buckwheat and goji berries

for 4 servings
  • 1 carrot
  • 125 g buckwheat flakes
  • 1 red-skinned apple
  • 150 ml apple juice
  • 150 ml Mandel drink
  • 2 tbsp dried goji berries
  • 2 tbsp chopped nuts
  • 1 large pear
  • 1-2 tsp lemon juice
  • 1 large orange
  • 2 tbsp chopped pistachios
  • 2 tbsp sunflower seeds

Preparation of Bircher muesli with buckwheat and goji berries

  1. Peel and grate the carrot. Place the buckwheat flakes and carrot in a large bowl. Wash the apple, quarter it, remove the core, dice the apple and add it. Add the apple juice, the almond drink and 1 tablespoon of goji berries and mix. Optional: refrigerate the mixture overnight.
  2. Roast the nuts in a coated pan. Wash the pear, quarter it, remove the core, cut the pear into wedges and sprinkle with the lemon juice. Peel and fillet the orange.
  3. Divide the muesli, which has soaked overnight, into bowls and serve garnished with the nuts, pear, orange, remaining goji berries, pistachios and sunflower seeds.

Tips on the recipe for Bircher muesli with buckwheat and goji berries

You can leave the muesli in the fridge overnight so that the buckwheat flakes absorb the liquid. On the other hand, if you like it crunchy, you can save yourself the nightly swelling.
