Baking bread without flour: bagels with sesame

Homemade bagels are a must for an extended Sunday brunch. The special highlight: Instead of using wheat flour, we prepare the bagels with oatmeal. These little powerhouses are not only richer in nutrients, but above all much more filling. We explain step by step how you can easily bake the healthy bagels at home.

Recipe for bagels with sesame seeds

Whether classic with salmon and cream cheese or sweet with jam – bagels can be deliciously topped as you wish. The American rolls taste really good when we bake them ourselves. With just a few ingredients and simple preparation steps, you can conjure up fresh bagels in no time.

Ingredients for the bagels without flour

for 8 servings
  • 500 g ground oat flakes or oatmeal
  • 2 tsp dry yeast
  • 1.5 tsp salt
  • 1.5 tbsp sugar
  • oil for the bowl

Preparing the bagels

  1. Mix ground oat flakes or oat flour, yeast, salt and sugar, pour in 300 ml lukewarm water and knead everything for 8-10 minutes with the dough hook of a hand mixer (or in a food processor) to form a smooth dough. If necessary, add 2-3 tablespoons more water. Place the dough in a lightly oiled bowl, cover and leave to rest in a warm place for approx. 1 hour.
  2. Knead the dough briefly on the floured work surface and divide into 8 pieces. Flatten the pieces slightly, fold the edge on one side to the middle and press firmly. Turn the dough slightly and fold it back to the middle. Continue all the way around until the dough is well stretched. Finally place the dough pieces with the seam down on the work surface and roll them gently into a round shape.
  3. Then use your index finger to poke a hole through the middle of the dough pieces. Insert the second index finger in the opposite direction, twist the fingers around each other and enlarge the hole to about 3 cm with light pressure. Place the bagels on 2 baking sheets lined with parchment paper.
  4. Bring water to a boil in a large saucepan. Place 2 bagels in hot water. As soon as they rise to the surface let stand for approx. 1 minute, then turn with the handle of a wooden spoon and let stand again for approx. 1 minute. Lift out with the handle of a wooden spoon, place on the baking sheet and sprinkle with sesame while still wet.
  5. Bake the bagels in a preheated oven at 180 °C for approx. 20 minutes.
