for 4 servings
  • 250g cooked beetroot (vacuum packed)
  • 1 tart apple
  • 50g walnut kernels
  • 2-3 sprigs of mint
  • Salt pepper
  • 1 tbsp lemon juice
  • 1 tbsp walnut or olive oil
  • 1 large whole wheat or spice baguette
  • 4 tbsp fresh goat cheese

preparation

  1. Dice the beetroot into small pieces. Wash, peel, quarter, core and dice the apple. Roughly chop the walnuts. Wash the mint, shake dry and pluck off the leaves.
  2. Put all the ingredients in a bowl and mix with salt, pepper, lemon juice and oil and season to taste.
  3. Cut the baguette into four pieces and halve horizontally. Spread each half with goat’s cream cheese.
  4. Drain the beetroot salad and spread on the bottom halves of the bread. Crumble over the feta. Cover with the top halves of the baguette and press together well.
